Apple Cider Vinaigrette Salad
This salad is great for a healthy, gluten-free meal because it is light and fresh. Every bite is a blast of flavor from the crisp greens, sweet apple slices, tangy cherry tomatoes, and the delicious apple cider vinaigrette. To make it more interesting and filling, sprinkle toasted walnuts and creamy feta cheese on top.
Ingredients:
- 1/4 cup apple cider vinegar
- 1/4 cup extra-virgin olive oil
- 2 tablespoons honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste

Instructions:
Olive oil, honey, Dijon mustard, salt, and pepper should all be mixed together in a small bowl with a whisk to make the vinaigrette dressing
Put the mixed greens, apple slices, cherry tomatoes, and red onion in a large salad bowl
