Easy Lentil Minestrone Soup

This easy lentil minestrone soup is a comforting and nutritious vegan dish packed with fiber and protein. Its a hearty twist on the classic minestrone soup, with lentils adding a delicious earthy flavor and plenty of wholesome vegetables.

Ingredients:

  • 1 cup dried lentils
  • 4 cups vegetable broth
  • 1 can 14
  • 5 oz diced tomatoes
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups chopped spinach
  • 2 tablespoons olive oil

Instructions:

In a large pot, heat olive oil over medium heat

Add diced onion, carrots, and celery

Cook until softened, about 5 minutes

Add minced garlic, dried thyme, and dried oregano

Cook for another minute

Add lentils, vegetable broth, diced tomatoes with juices, salt, and pepper

Bring the soup to a boil, then reduce heat to low and simmer for 20-25 minutes, or until lentils are tender

Stir in chopped spinach and cook for an additional 5 minutes until wilted

Taste and adjust seasoning if needed

Serve hot, optionally garnished with fresh parsley or a drizzle of olive oil
