Thai Peanut Hummus Dip
This Thai Peanut Hummus Dip is a delightful fusion of traditional hummus and Thai flavors. Its gluten-free, vegan, and a healthy snack or appetizer option with a touch of spiciness and nuttiness.
Ingredients:
- 1 can 15 oz chickpeas, drained and rinsed
- 1/4 cup peanut butter
- 2 tablespoons tahini
- 2 cloves garlic, minced
- 2 tablespoons soy sauce gluten-free
- 1 tablespoon fresh lime juice
- 1 tablespoon sriracha sauce adjust to taste
- 1 teaspoon fresh ginger, grated
- 1/4 cup coconut milk
- 1/4 cup fresh cilantro leaves
- 1/4 cup roasted peanuts, chopped
- Salt and pepper to taste
Instructions:
In a food processor, combine chickpeas, peanut butter, tahini, minced garlic, soy sauce, fresh lime juice, sriracha sauce, and grated ginger
Blend until smooth and creamy, scraping down the sides of the processor as needed
Gradually add coconut milk and continue to blend until the mixture reaches your desired consistency
Taste and adjust the seasoning with salt, pepper, and more sriracha sauce if you prefer it spicier
Transfer the hummus to a serving bowl
Garnish with fresh cilantro leaves and chopped roasted peanuts
Serve with gluten-free crackers, vegetable sticks, or pita bread for dipping
