This Asian Quinoa Power Salad is a nutritious and flavorful meal thats quick to make. Packed with colorful vegetables, protein-rich edamame, and a delightful sesame dressing, its a one-bowl wonder that will leave you feeling energized and satisfied.

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup shredded red cabbage
  • 1 cup chopped kale
  • 1/2 cup shredded carrots
  • 1/2 cup edamame beans cooked
  • 1/4 cup sliced almonds
  • 2 tablespoons sesame seeds
  • 2 tablespoons chopped fresh cilantro
  • 1/4 cup diced red bell pepper
  • 1/4 cup sliced green onions

Instructions:

In a large bowl, combine the cooked quinoa, shredded red cabbage, chopped kale, shredded carrots, and edamame beans

Toss in the sliced almonds and sesame seeds for added crunch

Sprinkle with chopped fresh cilantro, diced red bell pepper, and sliced green onions

In a separate small bowl, whisk together the dressing ingredients see below
