Easy Keto Chicken Saltimbocca - Stuffed Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 8 slices of prosciutto
- 4 slices of provolone cheese
- 1 cup of baby spinach
- 1 tablespoon of olive oil
- Salt and pepper to taste
- 4 toothpicks
Instructions:
Preheat your oven to 375F 190C
Place each chicken breast between two sheets of parchment paper and pound them to 1/4-inch thickness using a meat mallet
Season each chicken breast with salt and pepper
Layer each chicken breast with 2 slices of prosciutto, 1 slice of provolone cheese, and 1/4 cup of baby spinach
Roll up each chicken breast tightly and secure with a toothpick
Heat olive oil in an oven-safe skillet over medium-high heat
Add the stuffed chicken breasts to the skillet and sear on each side until golden brown, about 2-3 minutes per side
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165F 75C
Remove toothpicks before serving
