Samgyetang Korean Ginseng Chicken Soup
Ginseng is added to samgyetang, a traditional Korean chicken soup, to make it healthier. This dish is comforting and healthy, and people often eat it in the summer to get more energy and immunity.
Ingredients:
- 1 whole chicken about 1
- 5kg
- 10-12 cloves garlic, peeled
- 6-8 dried jujubes red dates
- 1 cup sweet rice glutinous rice
- 6-8 slices ginger
- 6-8 green onions, chopped
- 4-6 fresh ginseng roots
- Salt, to taste
- Water, as needed
Instructions:
Clean the chicken well and take out any insides
Add some jujubes, garlic, ginger, and sweet rice to the inside of the chicken
Use kitchen twine to connect the chicken legs and keep the stuffing inside
Put chicken, green onions, ginseng roots, and water in a large pot
After the pot starts to boil, lower the heat and let it cook on low for about one and a half to two hours, or until the chicken is fully cooked and soft
Skim off any foam or dirt that comes to the top while the food is cooking
Add salt to the soup as needed
If you want, you can serve it hot with sliced green onions and extra jujubes on top
