Slow Cooker Rotisserie Chicken Soup
This slow cooker rotisserie chicken soup is a hearty and comforting meal that is great for cold days. A rotisserie chicken makes it easy and gives the soup a rich flavor.
Ingredients:
- 1 rotisserie chicken, shredded
- 4 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup uncooked pasta such as rotini or penne
- 2 cups fresh spinach leaves
- 2 tablespoons fresh parsley, chopped
Instructions:
Chicken broth, carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper should all be put in a slow cooker with shredded rotisserie chicken
Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours
Add the uncooked pasta to the slow cooker 30 minutes before you want to serve it
Add fresh spinach leaves and parsley and mix well
Put the lid back on and cook for another 30 minutes, or until the pasta is soft
Enjoy while hot
