Spring Asparagus, Artichoke and Arugula Salad with Chive Vinaigrette
This Spring Asparagus, Artichoke, and Arugula Salad with Chive Vinaigrette is a delightful combination of fresh, seasonal ingredients. The tender asparagus and artichoke hearts pair perfectly with the peppery arugula, while the chive vinaigrette adds a burst of flavor. Ingredients:
- 1 bunch of fresh asparagus, trimmed and blanched
- 1 can of artichoke hearts, drained and quartered
- 4 cups of fresh arugula leaves
- 1/4 cup of chopped fresh chives
- 1/4 cup of olive oil
- 2 tablespoons of white wine vinegar
- 1 teaspoon of Dijon mustard
- Salt and pepper to taste
- 1/4 cup of shaved Parmesan cheese optional
Instructions:
In a large mixing bowl, combine the blanched asparagus, quartered artichoke hearts, and fresh arugula leaves
In a separate small bowl, whisk together the chopped fresh chives, olive oil, white wine vinegar, Dijon mustard, salt, and pepper to make the chive vinaigrette
Drizzle the chive vinaigrette over the salad and toss gently to coat all the ingredients evenly
If desired, top the salad with shaved Parmesan cheese
