Rosemary Roasted Chicken and Potatoes

The rosemary adds a rich flavor to the chicken and potatoes, making this dish a tasty and filling meal.

Ingredients:

  • 4 chicken thighs
  • 4 medium potatoes, diced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

Preheat oven to 400F 200C

In a bowl, mix olive oil, rosemary, garlic, salt, and pepper

Place chicken thighs and diced potatoes on a baking sheet

Coat chicken and potatoes with the rosemary mixture

Roast in the preheated oven for 35-40 minutes, or until chicken is cooked through and potatoes are golden brown

Serve hot and enjoy
