Vegan Pumpkin Seed Pasta Salad
This vegan pumpkin seed pasta salad is full of new tastes and textures. A tasty and satisfying dish is made by tossing soft pasta, juicy cherry tomatoes, crunchy cucumber, and nutty pumpkin seeds in a tangy dressing.
Ingredients:
- 8 oz pasta of choice
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup pumpkin seeds
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- Salt and pepper to taste
Instructions:
As directed on the package, cook the pasta
Once its done, drain it and run cold water over it to cool it down
Put cooked pasta, cherry tomatoes, cucumber, red onion, pumpkin seeds, and parsley in a large bowl
Add apple cider vinegar, maple syrup, salt, and pepper to a small bowl and mix them together with a whisk
Add the dressing to the pasta salad and mix it all together
Put it in the fridge for at least 30 minutes before you serve it
