Zesty Southwestern Potato Salad
A zesty and flavorful potato salad with a southwestern twist, perfect for Memorial Day gatherings or any summer barbecue. The combination of fresh ingredients and spices gives this dish a refreshing kick.
Ingredients:
- 6 medium potatoes, peeled and diced
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1/4 cup diced red bell pepper
- 1/4 cup diced green bell pepper
- 1/4 cup diced jalapeno pepper
- 2 cloves garlic, minced
- 2 tablespoons lime juice
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions:
Boil the diced potatoes in salted water until tender, about 10-15 minutes
Drain the potatoes and let them cool
In a large mixing bowl, combine mayonnaise, sour cream, cilantro, red onion, red bell pepper, green bell pepper, jalapeno pepper, garlic, lime juice, cumin, chili powder, salt, and pepper
Add the cooled potatoes to the bowl and gently toss until evenly coated with the dressing
Refrigerate the potato salad for at least 1 hour before serving to allow the flavors to meld
Serve chilled and enjoy
